“Prats Vella” Macabeu 2017 is a generous and meticulously crafted expression of Ton Rimbau’s Porcellànic philosophy, shaped by lunar rhythms, mature vineyards and slow, intentional winemaking. Hand-harvested during the waning moon on fruit days, the grapes receive a gentle 50% press before a day of cold static settling, preserving purity and tension. Fermentation unfolds slowly with indigenous yeasts at ambient temperature in stainless steel, followed by natural malolactic fermentation that deepens volume and aromatic breadth.
Sourced from Prats Vella, a clay–limestone parcel planted in 1967 at 269 meters of altitude, this Macabeu carries the imprint of old vines and mineral-rich soils. After 12 months of aging in stainless steel, the wine undergoes its final refinement in ceramic bottles submerged underwater, a hallmark of Rimbau’s method that promotes silent, stable evolution and textural harmony.

The result is a natural, still white wine with remarkable amplitude and structure: mineral, creamy, expansive and quietly powerful. TON RIMBAU

Ton Rimbau develops his work at the intersection of viticulture, ecology and artistic creation, exploring how living systems, natural cycles and human intention converge to form a liquid expression of place. His practice is articulated through three conceptual lines: “Organic Continuums,” “Materia Viva,” and “The Liquid Archive,” where he investigates the dialogue between landscape, transformation and sensory perception.

In “Organic Continuums,” Rimbau treats the vineyard as a self-regulating ecosystem, allowing biodiversity, soil organisms and climate to shape the vines with minimal intervention. In “Materia Viva,” he views fermentation as an active creative force, working with clay vessels, submerged aging and silent, controlled environments that heighten the individuality of each vintage. Finally, “The Liquid Archive” reflects on wine as a repository of memory, where each bottle preserves the traces of a season, a landscape and a moment in time.

Although these three areas remain an evolving investigation, Rimbau’s work is defined by a deep sensitivity to the living world and a commitment to transforming natural processes into expressive forms.
