La Llaona, Sur Lie, 2017 | TON RIMBAU

€0.00

“La Llaona – Sur Lie” 2017 is a profound and meticulously crafted Xarel·lo that reflects Ton Rimbau’s lunar-guided philosophy and his commitment to letting nature shape the wine’s identity. Hand-harvested during the waning moon on fruit days, the grapes undergo a gentle 50% press followed by a day of static cold settling. A slow, ambient-temperature fermentation begins in stainless steel, supported by a delicate three-week bâtonnage that deepens texture while preserving purity. The wine completes malolactic fermentation naturally, gaining volume and quiet complexity.
Sourced from La Llaona, a single clay–limestone parcel at 292 meters planted in 1984, this Xarel·lo carries the mineral tension and depth of its origin. After 12 months in stainless steel and its characteristic refinement in ceramic bottles submerged underwater, the wine achieves a calm, layered expression shaped by time, silence and the energy of its environment.

The result is a still, natural white wine of remarkable depth and minerality: structured yet subtle, textured yet precise, offering a contemplative interpretation of Xarel·lo through the lens of sur-lie aging and ecosystem-led winemaking.

About the artist

TON RIMBAU

Ton Rimbau develops his work at the intersection of viticulture, ecology and artistic creation, exploring how living systems, natural cycles and human intention converge to form a liquid expression of place. His practice is articulated through three conceptual lines: “Organic Continuums,” “Materia Viva,” and “The Liquid Archive,” where he investigates the dialogue between landscape, transformation and sensory perception.

In “Organic Continuums,” Rimbau treats the vineyard as a self-regulating ecosystem, allowing biodiversity, soil organisms and climate to shape the vines with minimal intervention. In “Materia Viva,” he views fermentation as an active creative force, working with clay vessels, submerged aging and silent, controlled environments that heighten the individuality of each vintage. Finally, “The Liquid Archive” reflects on wine as a repository of memory, where each bottle preserves the traces of a season, a landscape and a moment in time.

Although these three areas remain an evolving investigation, Rimbau’s work is defined by a deep sensitivity to the living world and a commitment to transforming natural processes into expressive forms. His wines, always singular and profoundly connected to their origin, function as sensorial artworks that reveal movement, emotion and the passage of time.

As the official distributor of Ton Rimbau’s creations, EAST WEST SPACE offers a place where his wines can be tasted, discovered and understood within a broader artistic context. Through this collaboration, his unique production becomes accessible to a global audience seeking experiences that unite art, nature and contemporary creation.
