“Espurnejant” Brut Natural 2011 is one of the most unconventional and masterful sparkling wines ever produced in Catalonia — a biodynamic Xarel·lo shaped by deep soils, late harvesting and Ton Rimbau’s uncompromising Porcellànic philosophy. Sourced from La Llaona, a vineyard planted in 1984 on profound clay–limestone layers, the grapes are harvested in late October on fruit days, ensuring exceptional ripeness, complexity and aromatic density.
The grapes are pressed slowly at low pressure in vertical-plate presses, then macerated and fermented at low temperatures in stainless steel to preserve the purest expression of the variety. The wine is rounded for nine months in new French oak, gaining texture and resonance, before receiving a small addition of Macabeu must and being bottled into 750 ml ceramic vessels, where the natural sparkle is born.
Rimbau’s extreme biodynamic approach defines every stage: he does not plough, uses no copper or sulfur, and instead nourishes the vineyard with over 150 plant-based preparations — rosemary, thyme, mint, nettle, aloe vera, laurel, horsetail, oak bark and more — fostering a vibrant and autonomous ecosystem. His vision replaces the traditional idea of terroir with a belief in the self-regulating force of nature, of which he positions himself as guardian more than winemaker.
The result, Porcellànic Espurnejant 2011, is an extraordinary natural sparkling wine: vibrant yet deep, textural yet precise, mineral, luminous and utterly singular. It carries an energy, tension and finesse rarely found in sparkling wines — a benchmark creation that, without exaggeration, stands among the finest made in Catalonia.

About the artist

TON RIMBAU

Ton Rimbau develops his work at the intersection of viticulture, ecology and artistic creation, exploring how living systems, natural cycles and human intention converge to form a liquid expression of place. His practice is articulated through three conceptual lines: “Organic Continuums,” “Materia Viva,” and “The Liquid Archive,” where he investigates the dialogue between landscape, transformation and sensory perception.

In “Organic Continuums,” Rimbau treats the vineyard as a self-regulating ecosystem, allowing biodiversity, soil organisms and climate to shape the vines with minimal intervention. In “Materia Viva,” he views fermentation as an active creative force, working with clay vessels, submerged aging and silent, controlled environments that heighten the individuality of each vintage. Finally, “The Liquid Archive” reflects on wine as a repository of memory, where each bottle preserves the traces of a season, a landscape and a moment in time.

Although these three areas remain an evolving investigation, Rimbau’s work is defined by a deep sensitivity to the living world and a commitment to transforming natural processes into expressive forms. His wines, always singular and profoundly connected to their origin, function as sensorial artworks that reveal movement, emotion and the passage of time.
