“Cal Roget” Sweet Wine 2017 is one of Ton Rimbau’s most singular creations — a biodynamic, late-harvest Macabeu shaped by extreme natural processes and the quiet intelligence of an autonomous ecosystem. Sourced from a Macabeu vineyard planted in 1988 at nearly 300 meters above sea level, the grapes are overripe, raisined and noble rot–affected, developing extraordinary concentration and aromatic depth.
The vines are cultivated without copper, sulfur or synthetic treatments. Instead, Rimbau works with more than 150 plant-based preparations — rosemary, thyme, nettle, aloe vera, mint, laurel, horsetail, oak bark and “decanted” seawater — nurturing soil life and encouraging the proliferation of microorganisms. His approach goes beyond biodynamics: he refuses to plough, protects the natural ground cover and follows lunar cycles and elemental balance as guiding principles.

After a slow 50% nighttime press, the wine begins a long, silent evolution. As with all Porcellànic wines, it is stored vertically in submerged tanks until release, preserving purity and preventing oxidation. The result is a natural sweet wine that is revitalizing, aromatic and deeply mineral, offering an energetic, almost medicinal quality that makes it unlike any other dessert wine.

TON RIMBAU

Ton Rimbau develops his work at the intersection of viticulture, ecology and artistic creation, exploring how living systems, natural cycles and human intention converge to form a liquid expression of place. His practice is articulated through three conceptual lines: “Organic Continuums,” “Materia Viva,” and “The Liquid Archive,” where he investigates the dialogue between landscape, transformation and sensory perception.

In “Organic Continuums,” Rimbau treats the vineyard as a self-regulating ecosystem, allowing biodiversity, soil organisms and climate to shape the vines with minimal intervention. In “Materia Viva,” he views fermentation as an active creative force, working with clay vessels, submerged aging and silent, controlled environments that heighten the individuality of each vintage. Finally, “The Liquid Archive” reflects on wine as a repository of memory, where each bottle preserves the traces of a season, a landscape and a moment in time.

Although these three areas remain an evolving investigation, Rimbau’s work is defined by a deep sensitivity to the living world and a commitment to transforming natural processes into expressive forms. His wines, always singular and profoundly connected to their origin, function as sensorial artworks that reveal movement, emotion and the passage of time.
